Natural sweet creamy drind, Amazake is a popular japanese hot drink during the New Year's and Hina Matsuri (Doll Festival in March).  Local Koji co's Amazake is made only from rice koji, rice, and water.  Amazake make from rice koji has more nutrirional value that the one made with sake lees, and it's called the "IV drip to drink" in Japan.

 

Their amazake is cremier than commercially available amazake, and naturally gluten-free, non-dairy and vegan.  It contains vitamins B1, B2 and B6 plus a long list of other minerals and nutrients including folic acid, dietay fiber, oligosaccharide, cysteine, arginine, glutamin and amino acids.  Amazake can be used as a natural sweetener or a milk replacement.  

 

I put mine into my smoothies, morning glanora bowel and use in baking!  Amazake tastes great wrm or cold.  Enjoy!!

 

Instructions:

 

Amazake needs to be regregerated.  It last in the fridge for 1-2 weeks / and in the freezer for up to 3 months.

 

To warm up the amazake, warm in a pot at low to medium heat and stir.

 

Amazake is the best at 55-60 degrees C for all the benefits from koji fungus.
